| 2 size 3 eggs and 1 yolk | ||
| 150 g / 5 oz caster sugar | ||
| 500 g / 1 lb 2 oz cream cheese | ||
| Peel of 1 lemon | ||
| 50 g / 2 oz SR flour | ||
| 50 g / 2 oz raisins | ||
Directions
MAKING
1) Take a large bowl and beat in eggs, sugar, cream cheese, lemon rind, raisin, and flour.
2) Whisk all the ingredients well to make a smooth batter.
3) Take a buttered 20 cm
/ 8"" tart mould and pour the mixture.
4) Cook for 6 minutes on power.
SERVING
5) Served chilled in the mould.
6) To make it more attractive, you can top the flan with cherries.
