Delightful video! Clean and concise. Pate Brisee would be nice for the pie crust.
I usually buy frozen crayfish here in the SF Bay Area. Although live crayfish are available but do take a lot of labour to cook and shell.
The holy trinity of Cajun cuisine I think got it's name due to the French Catholics living there. The method is similar to the use of the mire poix in traditional French cuisine
