Cranberry Oatmeal Muffins Recipe
Cranberry oatmeal muffins are baked with dried cranberries and oats along with chopped walnuts. Filling and crunchy, this muffin recipe is sweetened with brown sugar. This muffin recipe is a healthy and nutritious snack.
Ingredients
1/2 cup finely chopped walnuts 125 mL
1/2 cup dried cranberries 125 mL
11/2 cups all-purpose flour 375 mL
1 tbsp baking powder 15 mL
3/4 tsp salt 4mL
3/4 cup old-fashioned oats 175 mL
3 tbsp softened butter or margarine 45 mL
3/4 cup firmly packed light brown sugar 175 mL
3/4 cup milk 175 mL
1 egg
Directions
In a small bowl, toss together nuts, cranberries and 1 tsp (5 mL) flour.
Set aside.
In a large bowl, combine remaining flour, baking powder and salt.
Stir in oats.
In another bowl, whisk together butter, sugar, milk and egg, blending well.
Add to flour mixture, stirring just until evenly moist and blended.
Fold in nut mixture.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for about 20 minutes.
