Cranberry Nut Bread Recipe

The cranberry nut bread is a sweet bread baked with cranberries and walnuts. Prepared with a batter of flour, sugar, eggs, milk, orange rind and caranberries, the cranberry nut bread can be served as dessert with cranberry sauce too.

Ingredients

 
1 cup cranberries
 
1/4 cup granulated sugar
 
3 cups sifted all-purpose flour
 
1 tsp. salt
 
3/4 cup granulated sugar
 
4 tsp. baking powder grated orange rind
 
1/3 cup chopped walnuts
 
1 cup milk
 
1 egg
 
2 tbs. melted butter

Directions

Press 1/2 cup cranberries through the food chopper and slice the other 1/2 cup in thin rings crosswise; mix cranberries with 1/4 cup sugar and set aside.
Sift flour, salt, sugar and baking powder together, and add the chopped nuts and orange rind.
Beat the egg slightly and combine with the milk and melted butter.
Mix the dry and wet ingredients together and then fold in the prepared cranberries.
Bake in a large greased loaf tin approximately 9x4x3 inches at 350F for 45 to 50 minutes.
Remove loaf from tin and cool.
