Cranberry Mince Pie Recipe
Cranberry mince pie is a wonderfully flavorful pie made with jellied cranberry sauce and apples. Touched with a spicy mix of ginger and cloves the cranberry mince pie is made a tad crunchy with walnuts and is served warm.
Ingredients
| Sugar | 1 1/3 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| 1/2 teaspoon each ginger and cloves | ||
| Cinnamon | 1 Teaspoon | |
| Seedless raisins | 1 1/3 Cup (16 tbs) | |
| California walnuts | 1/3 Cup (16 tbs), chopped | |
| Orange peel | 1 Tablespoon, grated | |
| Lemon peel | 2 Teaspoon, grated | |
| Lemon juice | 1/3 Cup (16 tbs) | |
| Cranberry sauce | 3/4 Cup (16 tbs), jellied | |
| 1 1/3 cups finely chopped apple | ||
| Pastry for 2-crust 9-inch pie | ||
Directions
Combine sugar, salt, and spices.
Add remaining filling ingredients; mix well.
Line 9 inch pie plate with pastry; fill.
Top with lattice crust.
Bake at 400° about 35 minutes.
