Ingredients

 Juice and grated rind of 1 orange
 3 tablespoons salad oil, Boiling water
 All purpose flour2 Cup (16 tbs)
 Baking powder2 Teaspoon
 Baking soda1/2 Teaspoon
 Salt1/2 Teaspoon
 Sugar1 Cup (16 tbs)
 Egg1 , beaten
 1 cup chopped or minced raw cranberries
 Walnuts2/3 Cup (16 tbs), chopped

Directions

Pour orange juice into a measuring cup, and add grated rind, oil and enough boiling water to make 3/4 cup.
Set aside.
Sift dry ingredients into a bowl, and make a well in the center.
Pour in the liquids and beaten egg.
Stir until blended.
Fold in cranberries and nuts.
Bake in a greased 9" x 5" x 3" loaf pan at 325 °F. 60—70 minutes or until center is set.
Cool in the pan.
Store 24 hours before slicing.
