Cranberry Upside Down Cake Recipe
Ingredients
1/4 cup butter or oil
1/3 cup honey
1 tablespoon grated orange peel
1/2 teaspoon vanilla
1 1/2. cups fresh cranberries(or frozen, thawed)
2 tablespoons honey
2 tablespoons orange juice
1 cup plus 1 tablespoon whole wheat flour
1 teaspoon soda
1/2 teaspoon salt
1/3 cup honey
1/4 cup oil
1/2 cup buttermilk
1 tablespoon grated orange peel
1 teaspoon vanilla
1 egg
Directions
Grease an 8 x 8-inch pan and line with parchment paper.Cream butter or oil with honey.
Blend in 1 tablespoon orange peel and 1/2 teaspoon vanilla.
Spread in prepared pan.
Coarsely chop cranberries (in blender or food grinder) and mix with 2 tablespoons honey and the orange juice.
Spread over the mixture in the pan.
Preheat oven to 350° F.
Mix flour, soda, and salt.
Mix honey, oil, buttermilk, orange peel, and vanilla.
Add to flour mixture.
Mix well and add egg.
When completely blended, pour over cranberries in pan.
Bake in preheated oven for about 30 minutes.
Remove from pan immediately by inverting onto serving plate.
Peel off parchment paper.
