Cranberry Relish Recipe
Ingredients
| Navel orange | 1 Large | |
| Lime | 1 | |
| Grated ginger | 1 Tablespoon | |
| Cinnamon sticks | 2 | |
| Chili | 1 , dried | |
| Vanilla bean | 1 | |
| Sugar | 2 Cup (16 tbs) | |
| Raisins | 1 Cup (16 tbs) | |
| Cranberries | 2 Pound |
Directions
GETTING READY
1.Dice 1/4 pieces of oranges and lime without removing their skin .
2.In a cheesecloth, put ginger, cinnamon sticks,chili and vanilla bean and secure them by tying.
MAKING
3.In a big heavy skillet with straight sides put sugar and cook it on low flame until the color changes to amber.
4.Avoid the lumps while cooking by stirring well or turning off the heat if needed.
5.Put orange, lime and the secured spices in the skillet and stir them continuously om high flame for 5 minutes.
6.Put raisins and cranberries in the skillet by placing them on the cente of the mixture and mix slowly for 10 minutes.
7.Once the ingredients get coated iwth sugar and cranberries start opening, turn off th eheat and let the ingredients cool.
8.Discard the spices and put the relish in sterilized jars and seal it tight.
9.Refrigerate the jar and use the relish for 3 months.
SERVING
10.Serve as desired.
