1. In a food processor, add the parsnips. Pulse the parsnips for about 1 minute or until grainy like a couscous. Once done, transfer it into a bowl and set aside.
2. Into the bowl of grainy parsnips, add olive oil, salt, black pepper and lemon juice. Mix until well combined.
3. Add the green onions, dill, cranberries and mix well.
4. Serve this cranberry dill rice immediately.
