Cranberry Chicken Skewers Recipe
Ingredients
| 750 g / 1 1/2 lb chicken mince | ||
| 1/2 cup / 30 g / 1 oz breadcrumbs, made from stale bread | ||
| Onion | 1 , diced | |
| Garlic | 2 Clove (5gm), crushed | |
| 1 teaspoon dried | 2 Tablespoon | |
| Mixed spice | 1 Teaspoon | |
| 1 egg, lightly beaten | ||
| 1/4 teaspoon Tabasco sauce or according to taste | ||
| 1/2 cup / 125 mL / 4 fl oz cranberry sauce, warmed | ||
Directions
1. Place chicken, breadcrumbs, onion, garlic, sage, mixed spice, egg and Tabasco sauce in a bowl and mix to combine.
2. Shape chicken mixture around lightly oiled skewers to form 7.5 cm / 3 in sausage shapes. Place skewers on a plate, cover and refrigerate for 2 hours.
3. Preheat barbecue to a medium heat. Place skewers on lightly oiled barbecue grill and cook, turning several times, for 5-10 minutes or until skewers are cooked. Drizzle with cranberry sauce and serve immediately.
