Cranberry Bread Recipe
I abandoned the traditional "family bread" we used to make for this one. My kids ask for this Cranberry Bread on most of the days. Get ready to make it often!
Ingredients
| Whole wheat flour | 2 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Sea salt | 1 Teaspoon | |
| 1/4 cup (60 ml) nonfat instant milk powder, optional juice of 1 orange | ||
| Safflower oil | 2 Tablespoon | |
| Raw honey | 3/4 Cup (16 tbs) | |
| 1 egg beaten or egg replacer | ||
| Walnuts | 1 Cup (16 tbs), chopped | |
| Orange rind | 1 Tablespoon, grated | |
| Cranberries | 1 Cup (16 tbs) | |
Directions
Mix the flour, baking powder, salt and milk powder.
Mix the orange juice, oil and water.
Add the honey and egg to the liquid.
Stir the liquid ingredients into the dry mixture.
Add the nuts, optional orange rind and berries and fold together.
Pour into an oiled loaf pan.
Bake at 325°F (165°C) for 50 minutes to 1 hour.
Cool on rack.
