Ingredients

 
1 1/4 cups all-purpose flour
 
1/2 cup sugar
 
1 tablespoon baking powder
 
1/2 teaspoon pumpkin pie spice
 
1/4 teaspoon salt
 
11/2 cups bran cereal
 
1 1/4 cups skim milk
 
2 egg whites
 
1/4 cup vegetable oil
 
1 cup coarsely chopped cranberries
 
1/2 cup raisins
 
1 teaspoon grated orange peel

Directions

Stir together flour, sugar, baking powder, pumpkin pie spice and salt; set aside.
Measure Kellogg's All-Bran cereal and milk into large mixing bowl; stir to combine.
Let stand 2 minutes or until cereal is softened.
Add egg whites and oil; beat well.
Stir in cranberries, raisins and orange peel.
Add dry ingredients to cereal mixture, stirring only until combined.
Divide batter evenly among 12 greased 2 1/2-inch muffin-pan cups.
Bake in 400°F oven about 22 minutes or until lightly browned; serve hot.

These are good. I made them sweeter by adding an additional cup of sugar. The batter was a little thin. Another l/4 cup of flour would help this but is not necessary. I used orange extract (l/4 tsp.) instead of the orange peel. They were flat on top, but this could have been the extra sugar or the thin batter. Taste was great though.
