Crackle Top Ginger Cookies Recipe

Ingredients
7 c. shortening
2 c. (packed) brown sugar
1 egg, well beaten
1 c. unsulphured molasses
4 c. sifted flour
1/2 tsp. salt
2 tsp. soda
2 tsp. ginger
1 tsp. vanilla
1 tsp. lemon extract

Directions
Cream shortening and brown sugar thoroughly; blend in egg and molasses.
Beat until light and fluffy.
Sift flour, salt, soda and ginger together.
Blend dry ingredients gradually into creamed mixture.
Dough should be soft but not sticky.
Add vanilla and lemon extract.
Chill for about 4 hours or until dough can be handled easily.
Dust hands with flour; shape dough into balls about 1 1/2 inches in diameter.
Place on greased cookie sheet.
Bake in 350-degree oven for about 15 minutes or until brown.
Sprinkle with sugar; remove from cookie sheet.
Yield: 30 cookies.
