Cracker Jack Cookies Recipe
Ingredients
| 1 cup corn oil margarine, softened | ||
| 1 cup packed light brown sugar | ||
| Granulated Sugar | 1 Cup (16 tbs) | |
| Eggs | 2 | |
| Vanilla extract | 2 Teaspoon | |
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Rolled oats | 2 Cup (16 tbs) | |
| 2 cups crispy rice cereal | ||
| Coconut | 1 Cup (16 tbs), flaked | |
Directions
Preheat oven to 350 degrees.
In a large mixer bowl cream margarine, brown sugar and granulated sugar until light and fluffy.
Add eggs and vanilla; mix well.
In a small bowl combine flour, baking powder, baking soda and salt; mix lightly.
To the creamed mixture add dry ingredients; mix well.
Stir in oats, cereal and coconut.
Grease cookie sheets or use nonstick cookie sheets.
Onto the prepared cookie sheets drop dough by teaspoon-fuls.
Bake for 10 to 12 minutes or until brown.
