Cracked Wheat Pilaf Recipe
Ingredients
| Butter/Margarine | 3 Tablespoon | |
| Cracked wheat | 1 Cup (16 tbs) | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| 3 to 4 cups boiling consomme | ||
| Salt | 1 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
Directions
Melt butter in heavy saucepan.
Stir cracked wheat and onion into it.
Cook, stirring constantly, for 3 minutes.
When cracked wheat is golden, add 3 cups of the consomme and salt and pepper.
Simmer, covered, over low heat for about 30 minutes, or until tender.
After 20 minutes, check for moisture; if necessary, add remaining consomme (start with 1/2 cup) to prevent scorching.
Serve instead of potatoes or rice.
