Cracked Wheat Muffins Recipe

Ingredients
1 1/4 cups water
3/4 cup bulgur (cracked wheat)
2 cups all-purpose flour
1 cup whole-wheat flour
1/2 cup sugar
4 1/2 teaspoons baking powder
1 teaspoon salt
4 eggs
3/4 cup salad oil
Directions
1. In 1-quart saucepan over medium heat, heat water and bulgur to boiling. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally, until water is absorbed and bulgur is tender. Remove saucepan from heat; set aside to cool slightly.
2. Preheat oven to 350°F. Grease ten 3" by 1 1/2 muffin-pan cups.
3. In large bowl, mix all-purpose flour, whole wheat flour, sugar, baking powder, and salt. In medium-sized bowl, beat eggs slightly; stir in salad oil and cooked bulgur. Stir egg mixture into flour mixture just until flour is moistened (batter will be lumpy).
4. Spoon batter into muffin-pan cups. Bake 25 minutes or until golden and toothpick inserted in center of muffin comes out clean. Immediately remove muffins from pans; serve warm. Or cool on wire rack to serve later; reheat if desired.
