Cracked Wheat Bread Recipe

Ingredients

 
3 cups cracked wheat
 
Water
 
3 tablespoons batter or vegetable oil
 
1 tablespoon brown sugar
 
1 tablespoon salt
 
3 packages dry active yeast
 
8 to 9 cups whole wheat flour

Directions

1. Put the cracked wheat in a very large bowl and cover with 4 cups of boiling water. Stir in the butter, brown sugar, and salt. Cool to lukewarm.
2. Dissolve the yeast in 1 1/3 cups warm water and stir into the first mixture.
3. Gradually stir in enough whole wheat flour to make a firm dough.
4. Turn out onto a floured surface and knead for 10 minutes, or until elastic. Put in an oiled bowl, turning to oil the top. Cover with a sheet of plastic wrap, allowing the plastic to touch the dough.
5. Let rise in warm place for 1 1/2 hours, or until doubled.
6. Turn the dough out and punch down. Let rest, covered with same sheet of plastic, for 15 minutes. Then shape into 4 loaves and put in oiled 8- by 4- by 2-inch loaf pans (9- by 5- by 3-inch pans can also be used).
7. Let rise for 30 minutes, or until light.
8. Preheat the oven to 375 degrees.
9. Bake for 30 minutes, or until well browned and done.
