Cracked Pepper Steak Recipe
Ingredients
| 4 pounds chuck steak | ||
| 2 1/2 to 3 inches thick Instant seasoned meat tenderizer | ||
| 3 tablespoons cracked or coarsely ground black pepper | ||
Directions
Slash fat edges of steak.
Sprinkle all surfaces of steak with meat tenderizer using about 1/2 teaspoon per pound of meat.
Do not use salt.
To ensure penetration pierce all sides deeply at 1/2-inch intervals with a long-tined fork, working tenderizer in.
Press cracked pepper into both sides of steak.
Broil steak on grill about 3 inches from coals, 35 to 50 minutes, turning frequently with tongs and a turner.
To serve, slice with sharp knife diagonally across the grain of the meat, at about a 30° angle keep the slices thin.
