Crab Newburg Recipe
Crab Newburg is a recipe in which crab meat is cooked in cream and sherry. It is good to be served as a delicious appetizer or even a side dish. Crab Newburg goes very well with steamed rice and vegetables.
Ingredients
| Butter | 4 Tablespoon, melted | |
| All-purpose flour-3 tablespoons | ||
| Salt | 1/2 Teaspoon | |
| Paprika | 1/2 Teaspoon | |
| Cayenne pepper | 1 Dash | |
| Coffee cream-1 1/2 cups | ||
| Egg yolks | 3 | |
| Back fin crab meat-1 pound | ||
| Sherry | 3 Tablespoon | |
| Toast points-to serve | ||
Directions
MAKING
1)In a pan, heat butter and add flour, salt, paprika and cayenne pepper.
2)Add cream slowly and cook until thickened and smooth. Keep stirring.
3)In a bowl, mix some hot sauce into egg yolks and mix with remaining sauce, stirring constantly.
4)Fold in crab meat and simmer until heated through.
5)Remove from heat and slowly add sherry.
SERVING
6)Serve the sauce on toast points.
