Crabmeat Scrambled With Eggs Recipe
Ingredients
| 1 cup crabmeat, picked over well | ||
| Eggs | 4 standard | |
| Salt | 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Scallions | 1 Tablespoon, chopped | |
| 3 tablespoons oil or butter | ||
Directions
1. Flake the crabmeat. Beat the eggs with the salt, pepper and scallions.
2. In a skillet heat half the oil, add the crabmeat and cook gently until hot. Add the remaining oil and heat.
3. Add the eggs and adjust the heat at high. With a fork draw the solidified egg to the center of the skillet, tilt the skillet and let the uncooked egg run over the pan. Repeat until most of the egg has set.
