Crab Stuffed Artichokes Recipe
Ingredients
| Parsley | 2 Tablespoon, minced | |
| 1 shallot or green onion, chopped | ||
| Lemon juice | 1 1/2 Tablespoon | |
| Olive oil | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Dash liquid hot pepper seasoning | ||
| Dried tarragon | 1/4 Teaspoon, crumbled | |
| 1 pound Dungeness crab, small cooked shrimp, or lobster | ||
| 4 large, whole cooked artichokes | ||
| Green goddess yogurt dressing | ||
Directions
Mix together in a bowl the parsley, shallot, lemon juice, oil, salt, hot pepper seasoning, and tarragon.
Add seafood and mix lightly.
Cover and chill.
Trim off stem end of each artichoke and scoop out center choke.
Gently spread open leaves slightly and spoon marinated seafood into the center of each.
Arrange on greens and pass Green Goddess Yogurt Dressing.
Contains about 175 calories per salad, plus 9 calories per tablespoon of dressing.
