Crab & Pea Pod Pita Recipe
Ingredients
| Crab Mixture | ||
| 8 ounces imitation crabmeat, drained, flaked | ||
| 2 cups fresh pea pods or snow peas, cut into 1-inch pieces | ||
| Water chestnuts | 1/2 Cup (16 tbs), chopped | |
| Red bell pepper | 2 Tablespoon, chopped | |
| Green onions | 2 Tablespoon, sliced | |
| 1/4 cup fat free mayonnaise | ||
| 1 tablespoon Dijon-style mustard | ||
| Lemon juice | 1 Teaspoon (Dressing) | |
| Curry powder | 1 Teaspoon (Dressing) | |
| Pita | ||
| Whole wheat pita | 4 (Dressing) | |
| Lettuce leaves | 8 (Dressing) | |
| Swiss Cheese slice | 4 , cut in half (Dressing) | |
Directions
Combine all crab mixture ingredients in large bowl.
Combine all dressing ingredients in small bowl; toss with crab mixture.
Line pita pockets with lettuce leaf. Place 1 piece cheese in each pita pocket. Fill with 1/2 cup salad mixture.
