Microwaved Crab Newburg Recipe
Ingredients
| Butter/Margarine | 4 Tablespoon | |
| Crabmeat | 1 Pound, drained | |
| Lemon juice | 1 Teaspoon | |
| All purpose flour | 2 Tablespoon | |
| Paprika | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cayenne pepper | 1/8 Teaspoon | |
| 2 cups milk or light cream | ||
| Dry sherry | 1/2 Cup (16 tbs) | |
| Egg yolks | 2 , beaten | |
| Chopped parsley or chives | ||
Directions
Place butter in a 2 qt.glass casserole dish.
Microwave 1 minute to 1 minute 30 seconds or until melted.
Stir in crabmeat and lemon juice.
Combine flour, paprika, salt and cayenne pepper.
Stir into crabmeat mixture.
Gradually stir in milk and sherry.
Microwave, uncovered, 7 to 10 minutes or until thickened.
Stir every 2 minutes.
Stir a small amount of the hot mixture into the egg yolks.
Then stir egg yolks into the hot mixture.
Let stand 5 minutes before serving
