Ingredients
| Crab meat | 1 Cup (16 tbs) | |
| Oil | 2 Tablespoon | |
| Onion | 1 , shredded | |
| 4 eggs, lightly beaten | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1 stalk scallion, cut into 1 inch sections | ||
Directions
Remove broken shells and cartilage from the crab meat and flake.
Heat a pan with the oil and when it is very hot add the onion and saute till the shreds are transparent.
Add the crab meat and saute for 2 or 3 minutes, stirring occasionally.
Add the eggs and continue to stir.
When mixture resembles a light custard, remove: from the heat and turn onto a hot plate.
Sprinkle the scallion over the egg and serve immediately.
