Crab Meat Pineapple Recipe
The crab meat pineapple is a crab and veggie salad falvored with fresh pineapples. Combined with mayo, the crab meat pineapple has meat from the alaskan king crab, peppers, celery, onions and pineapple bits and is served in hollowed pineapple shells.
Ingredients
1 fresh med. pineapple
9 oz. Alaskan King crab meat
4 oz. mayonnaise
2 oz. chopped celery
2 oz. chopped green pepper
2 oz. chopped onion
Directions
Cut pineapple in quarters, across the fronds.
Scoop meat out; remove core and cut pineapple in 1/2-inch dice.
Arrange two pineapple quarters on boat dish or oval platter, end to end, fronds outside.
Blend the diced pineapple with 2 ounces crab meat and 2 ounces mayonnaise.
Fill one side of pineapple on each dish.
Blend celery, green pepper, onion, 2 ounces crab meat and 2 ounces mayonnaise.
Fill other side of pineapple on each dish.
Garnish both down center with remaining sliced crab meat.
