Butter-6 tablespoons
Onion-2 tablespoons, finely chopped
Celery-1/2 cup, finely chopped
All-purpose flour-3 tablespoons
Salt-3/4 teaspoon
Half and half-2 cups
Sherry-4 tablespoons
Egg-1, beaten
Hot sauce-1/4 teaspoon
Crab meat-3 cups
Parsley-2 tablespoons, chopped
Fine bread cubes-1 1/2 cups
Directions
MAKING
1)In a saucepan, heat 4 tablespoons butter and saute onion and celery until onion is tender but not brown.
2)Add flour and salt and mix.
3)Add half and half and sherry gradually.
4)Cook until mixture thickens and comes to a boil. Keep stirring.
5)Remove from heat and add some sauce to egg slowly. Stir rapidly.
6)Return egg mixture to sauce and mix well.
7)Add hot sauce, crab meat and parsley. Mix well.
8)Take 6 individual shells or casseroles and put the mixture.
9)In a skillet, melt remaining butter and toss bread cubes.
10)Sprinkle them over crab mixture.
11)Bake at 350 degrees for 20 minutes.

12)Garnish each serving with lemon twist and sprig of parsley. Serve.
