Crab Curry Penne Pasta with Tomato Chutney Recipe

Amazingly tasty Thai influenced curry crab pasta with a tasty tomato chutney.

Recipe Story

I first ate this type of dish some 12 years ago in a Seattle restaurant, came home and duplicated it. Over the years I have played with the ingredients and it is a family favourite.

Ingredients

 
2 tablespoons (1/4 stick) butter
 
1 cup chopped onion
 
1 large Granny Smith apple, peeled, cored, cut into 1/2-inch pieces
 
3 garlic cloves, minced
 
2 teaspoons curry powder (non-bitter Thai type)
 
1/2 cup dry Marsala wine
 
1 cup chicken stock or canned low-salt chicken broth
 
2 teaspoons fish sauce-I prefer Golden Boy Brand
 
2+ teaspoon Thai red curry paste-Mae Ploy is a good Brand comes in a small can
 
1 1/2 cups canned unsweetened coconut milk-I prefer Chaokoh Brand
 
1/2 pound penne pasta (whole wheat is good and healthy)
 
1/2 pound crabmeat, flaked (I use either fresh Dungeness of canned in cooler section of market)
 
3 tablespoons chopped fresh basil
 
Melt butter in heavy large skillet over medium-high heat.
 
Add onion, apple and garlic; sauté until onion is soft, about 6 minutes.
 
Stir in curry powder.
 
Add Marsala.
 
Boil until liquid is slightly reduced, about 2 minutes.
 
Add stock, fish sauce and curry paste.
 
Simmer until liquid is slightly reduced, about 5 minutes.
 
Add coconut milk.
 
Simmer until slightly thickened, about 3 minutes.
 
Meanwhile, cook pasta in large pot of boiling salted water, stirring occasionally, until tender but still firm to bite.
 
Drain well.
 
Return pasta to pot.
 
Pour sauce over pasta.
 
Stir in crabmeat.
 
Season to taste with salt and pepper.

Directions

Plate pasta on individual plates, garnish with chutney and basil sprigs.

What a great twist on plain old penne pasta. The flavor combination is exciting and finishes extremely well with the Tomato Chutney.

The combination of flavours is simply awesome I am told by everyone who tries it, actually devours it! Being in the SF bay Area I am always tring to use crab in innovative ways other than salds and crab cakes. I make a Thai curry crab that is as good or better than Somboon in Bangkok which has been a favourite for many years. They let me in the kitchen I watched then I reduced the oil and played with it at home.
