Crab Cakes With Lemon Sauce Recipe

Ingredients
1/2 cup mayonnaise
1/2 cup finely chopped onion
1 tablespoon chopped parsley
2 eggs, slightly beaten
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon hot pepper sauce
1 pound lump crab meat
1 cup finely crushed soda crackers
2 tablespoons butter
1/2 cup vegetable oil
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1 small garlic clove, minced
Directions
Combine the 1/4 cup mayonnaise, onion, parsley, eggs, Worcestershire sauce, dry mustard and hot pepper sauce in a bowl and mix well.
Fold in the crab meat and 1/4 cup of the cracker crumbs.
Shape the crab mixture into 8 cakes.
Coat with the remaining cracker crumbs.
Arrange on a baking sheet lined with waxed paper.
Melt 1 tablespoon of the butter in 2 tablespoons of the oil in a skillet over medium heat.
When the foam subsides, add half the crab cakes.
Cook 2 to 3 minutes.jpn each side or until brown and crisp.
Drain on paper towels and keep warm.
Repeat with'the remaining butter, oil and crab cakes.
Serve with topping made by combining the 1/2 cup mayonnaise, lemor 1/2 juice and garlic in a small bowl, stirring until smooth.
