Directions

Step1-Remove all cartilage from crabmeat.

Step2- Put crabmeat, broth/stock, mushroom soup and half and half in a soup pan and heat but do not boil.

Step3-Stir in the sherry and serve at once.

Well sure is a waste but the soup is a real crowd pleaser and a go-to when you have sudden guests over for dinner. You can definitely substitute with imitation crab meat. That is so much cheaper and marries well with canned soup!

I do not understand why one would make a fish or shellfish soup with chicken stock. Why not vegetable or fish stock?

Hi Yvonne Stephens, I am guessing this is one of those quick recipes to pull out when you have sudden guests over and want to serve something fancy and impressive but do not have any time to prepare. Since you get chicken broth in cans it is probably suggesting you use that but if you have fish or vegetable stock already ready or have 20 minutes to prepare it then go ahead and use that. There is no doubt that the soup will taste much better when made with a homemade fish stock instead of canned chicken broth!
