Crab Stew Recipe

Ingredients
2 tablespoons soft butter or margarine
1 tablespoon flour
2 hard-cooked eggs
1/2 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon black pepper
Dash of cayenne
1 quart milk, scalded
6 to 12 ounces fresh or canned crab meat
2 tablespoons Sherry
1 lemon, sliced
Chopped parsley
Directions
Cream butter with flour, mashed hard-cooked egg yolks (reserve whites and chop), mustard, salt, pepper, and cayenne, beating until mixture is smooth.
Slowly add enough hot milk to make a thin paste.
Pour paste into the remaining hot milk and bring just to the boiling point, stirring constantly.
Add crab meat and heat 1 minute longer.
Remove from heat and add Sherry.
Place a slice of lemon in each soup bowl.
Pour in stew and garnish with chopped hard-cooked egg white and parsley.
