Ingredients

 Crab meat1 Can (10oz)
 Vegetable oil6 Tablespoon
 Onion1 Small, sliced
 Celery1/2 Cup (16 tbs), diced
 Frozen mixed vegetables package1 , thawed
 Cooked rice3 Cup (16 tbs)
 Salted peanuts1/4 Cup (16 tbs)
 Soy sauce

Directions

1. Drain crab meat; flake and remove bony tissue, if any.
2. Heat 4 tablespoons of the vegetable oil in a large skillet; stir in onion, celery and mixed vegetables. Saute, stirring several times, for 10 minutes, or until vegetables are crisply tender. Remove and set aside for Step 4.
3. Stir remaining 2 tablespoons of oil and cooked rice into same pan; cook, stirring often, over medium heat 10 minutes, or just until rice grains separate and turn creamy.
4. Stir in crab meat, sauteed vegetables and salted peanuts. Heat, stirring once or twice, just until hot. Spoon into heated bowl; serve with soy sauce to drizzle over.
