 Onions3 , minced
 1/2 teaspoon white or black pepper
 3 cloves garlic, minced fine
 Lard6 Tablespoon
 2 tablespoons celery, cut up fine
 Crabmeat1 Pound
 2 tablespoons parsley, cut up fine
 Eggs8

Directions

Put the onions and garlic in lard in a saucepan and let fry slowly until brown.
Put in the crabmeat and cook for 10 minutes.
Put in the seasoning, celery, and parsley.
Beat eggs well in a large bowl until they are frothy.
Let the crabmeat mixture cool, pour it into the bowl with the eggs, stir well.
Place the mixture in a greased omelet pan, put on a slow fire and cook, turning the pan over every 5 minutes.
