Crab Newburg Recipe
Ingredients
| Butter/Margarine | 6 Tablespoon | |
| Flour | 2 Tablespoon | |
| 3 cups cut-up, cooked or canned crab | ||
| Nutmeg | 1/3 Teaspoon | |
| Dash paprika | ||
| Salt | 1 Teaspoon | |
| Sherry | 3 Tablespoon | |
| Egg yolks | 3 | |
| Light cream | 2 Cup (16 tbs) | |
| 6 patty shells | ||
Directions
In double-boiler top, over low heat, melt butter; stir in flour, crab, nutmeg, paprika, salt, sherry.
Beat yolks slightly; add cream; mix well.
Slowly stir yolks into crab; cook over hot water, stirring, until just thickened.
Spoon into patty shells.
