Ingredients
2 tablespoons butter
Pepper
2 tablespoons flour
1/2 teaspoon prepared mustard
1 cup boiling milk
1/2 pound crab meat
1/2 tablespoon lemon juice
1/2 cup grated Parmesan or any other sharp cooking cheese
1/2 cup cream
Directions
Make a sauce, i.e., melt the butter, add the flour, gradually add the boiling milk Cook for 10 minutes.
Add all other ingredients except 1 tablespoon of the cheese.
Taste for saltiness, as cheese is unpredictable.
Pour into an ovenproof dish, dust with the reserved cheese, and brown under the broiler.
