Ingredients
1 large cooked crab cleaned and cracked
3 tablespoons salad oil
1 1/2 tablespoons fermented black beans, rinsed, drained, and finely chopped
1 large clove garlic, minced
3/4 teaspoon minced fresh ginger
1 small green pepper, seeded and cut in 1 inch squares
1 tablespoon each soy sauce and dry sherry
2 whole green onions, cut in 1-inch lengths
1/3 cup chicken broth
Directions
Cut crab body in quarters; leave legs and claws whole.
Heat a wok or wide frying pan over high heat.
When pan is hot,add oil.
When oil begins to heat, add black beans, garlic, and ginger.
Stir-fry for 5 seconds.
Add green pepper and stir-fry for 1 minute.
Add crab, soy, sherry, onion, and chicken broth.
Cook, stirring, until crab is hot
