Tv Time Crab Cakes Recipe
Ingredients
Tartar Sauce
1 16-ounce container lump crab meat
2 eggs
1 tablespoon dry sherry
1 teaspoon grated onion
1/4 teaspoon salt
1/2 cup coarsely crumbled saltine crackers
4 tablespoons butter or margarine
Directions
1. Prepare Tartar Sauce; cover and refrigerate.
2. Pick over crab meat to remove any pieces of shell or cartilage.
3. In medium-sized bowl, beat eggs, sherry, onion, and salt until blended; stir in crab meat and crumbled crackers just until mixed.
4. In 12-inch skillet over medium heat, in hot butter or margarine, spoon crab mixture into 4 mounds; with pancake turner, press mixture into 3 1/2 inch round cakes. Cook cakes until browned on both sides and heated through, about 10 minutes.
