Crab and Spinach Casserole Recipe
Ingredients
| Frozen spinach | 2 Pound | |
| Sharp cheddar cheese | 1/4 pound, shredded | |
| Crab meat | 1 pound | |
| Onion | 1 Tablespoon, scraped | |
| Lemon juice | 1 Tablespoon | |
| Dash of nutmeg | ||
| Flour | 1 Tablespoon | |
| Butter | 2 Tablespoon, melted | |
| Tomato soup | 1/2 Can (10oz) | |
| Sour cream | 1/2 Pint | |
Directions
Cook spinach about 1 minute in small amount of water; drain thoroughly and chop.
Arrange in bottom of greased 1 1/2 -quart casserole.
Sprinkle with half the cheese, then crab meat and onion, if used.
Add lemon juice and dash of nutmeg.
Blend flour in butter; add soup and cook until slightly thickened.
Remove from heat; stir in sour cream and pour over spinach mixture.
Sprinkle with remaining half of cheese.
Bake, uncovered, in moderate oven (350°) for 30 minutes.
Makes 6 servings.
