Cozido Recipe
This Cozido makes a perfect meal for the utterly famished. I like this vegetable, pork stew of Spanish and Portuguese origin with rice. Try out the Cozido and let me know if you like it !
Ingredients
| 2 cups small white beans | ||
| Water | 6 Cup (16 tbs) | |
| Salt pork | 1/8 Pound, diced | |
| 2 lbs. lean country-style spareribs, cracked & cut | ||
| Olive oil | 2 Tablespoon | |
| Chicken thighs | 4 | |
| 4 chicken drumsticks | ||
| Garlic | 4 Clove (5gm), minced | |
| Oregano leaves | 1 Teaspoon | |
| Tomato Paste | 1 6 Ounce | |
| Italian sausage | 3/4 Pound | |
Directions
Using a 6-quart covered ovenproof pan, simmer beans in water for 1 hour.
Do not add salt.
While beans are simmering, brown salt pork and remove from pan.
Brown ribs next and remove.
Add oil to pan and brown chicken.
Combine all ingredients with the cooked beans and bake at 325° for 2 hours.
Remove sausage and slice, return to pan and cook a few more minutes.
