Cowpoke Beans Recipe
Cowpoke beans is a savory beans recipe cooked with suet and tomatoes. Herbed to taste, the cowpoke beans can be prepared with pinto or red beans. Seasoned and spiced with chili pepper and powder, the cowpoke beans can be served with meals of choice.
Ingredients
1 pound dried pinto or red beans
Ham bone
1 red chili pepper
1 teaspoon salt
1/4 pound suet, chopped
1 large onion, chopped
1 clove garlic, chopped
4 ripe tomatoes, chopped
1/2 cup chopped parsley
1/2 teaspoon ground cumin
1/2 teaspoon dried marjoram
1 1/2 tablespoons chili powder
1 teaspoon salt
Directions
Cover beans with cold water and soak overnight.
Next day add the ham bone, red chili pepper, and salt to the undrained beans.
Bring to a boil, reduce heat, cover, and simmer gently for several hours or until beans are tender.
Drain and save liquid.
Toward the end of the cooking period, heat suet in a large skillet, stir in onion and garlic, and cook 5 minutes or until onions take on a little color.
Add tomatoes, parsley, 1 cup of the bean liquid, and all remaining ingredients.
Cook over a low heat, stirring frequently, for 45 minutes.
Combine with beans and continue simmering gently for 20 minutes.
