Cowpea Salad Recipe
Ingredients
| Bacon slice | 1 | |
| Garlic | 2 Clove (5gm), finely chopped | |
| Green bell pepper | 1 Large, chopped | |
| Green chillies | 2 , chopped | |
| Tomato sauce | 1 1/2 Tablespoon | |
| Cowpeas | 1 1/2 Cup (16 tbs), boiled | |
| Lime juice | 1 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Ground black pepper | 1/2 Teaspoon | |
| Tomato | 1 Medium, diced | |
| Head of lettuce | 1 Small, chopped | |
| Onion | 1 Small, chopped |
Directions
Cut bacon into 1" pieces.
Place a non-stick pan over moderate heat and add bacon.
Fry till crisp, drain and place on kitchen paper to absorb excess fat.
Return pan to heat, add garlic and bell pepper and saute for 1 minute.
Stir in green chillies, tomato sauce, cowpeas, lime juice, salt and pepper and bring to boil.
Pour into a serving bowl.
Mix in bacon, tomato, lettuce and onion.
