Ingredients

 
1/4 cup olive oil (extra virgin)
 
2 – 3 ounces (1/2 – 3/4 link) of Mexican-style chorizo
 
2 tablespoons sofrito (canned)
 
2 packets of Sazon (con culantro y achiote)
 
1/2 onion (sweet), chopped
 
2 cloves garlic, minced
 
1 can whole tomatoes, cut up into quarters and juice saved
 
1 can diced tomatoes, fire roasted
 
1 can black beans, drained slightly (not squeezed dry)
 
4 tablespoons chili powder
 
1 teaspoon Creole seasoning (Tony Chachere’s)
 
1/2 teaspoon cayenne pepper
 
1 pound ground beef (93/7)
 
jalapeno jack and mild cheddar cheese (optional)
 
jalapenos (optional)

Directions

Pour oil into large pot on stove and turn heat to medium. Add chorizo and break into smaller pieces with wooden spoon. Once broken down, add sofrito and sazon and stir. Add onions, turn heat to medium low, and simmer until onions are becoming translucent (3-5 minutes). Add garlic and cook for another 2 minutes. Turn heat to medium and add tomatoes, beans, chili powder, Creole seasoning, and cayenne pepper. Cook for 5 minutes and turn heat to low/medium low to simmer. Place skillet on stove and turn heat to medium. Add ground beef, break into small pieces, and stir continuously until pink just disappears. Add cooked beef to pot and turn heat to medium. Once simmering, turn heat to low, place lid on chili, and cook on a low simmer for 15 minutes. Remove from heat, serve in bowl, and garnish with favorite toppings. Enjoy with a spoon!
