Couscous Salad Recipe
Ingredients
1/4 cup water
1 medium onion, finely chopped
1 clove garlic, minced
2 scallions, chopped
3 carrots, chopped
2 stalks celery, chopped
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
10 dried or fresh apricots, chopped
1/2 cup raisins
1 1/2 cups water
1 cup couscous
Directions
Heat water in skillet over medium heat.
Add onion, garlic, scallions, carrots, and celery.
Cook and stir for 5 minutes over medium heat.
Add more liquid if necessary during this process.
Bring 1 1/2 cups water to a boil in a saucepan.
Add the couscous.
Cover the pan and remove from heat.
Let stand for 5 minutes.
Drain onion mixture and toss with cinnamon, cloves, apricots, and raisins.
Toss with couscous.
Add onion, garlic, scallions, carrots, and celery.
Cook and stir for 5 minutes over medium heat.
Add more liquid if necessary during this process.
