3/4 cup (180 ml) water
1/2 cup (120 ml) couscous
1 lb (455 g) cucumber, chopped
1/2 cup (120 ml) radishes, sliced
1/2 cup (120 ml) green onions, chopped
1/2 cup (120 ml) red peppers, chopped
1/2 cup (120 ml) tomatoes, chopped
5 tbs (75 ml) OMEGA Safflower Oil
4 tbs (60 ml) fresh lemon juice
2 tbs (30 ml) fresh mint
1/2 tsp (3 ml) thyme
1/2 tsp (3 ml) basil
1/2 tsp (3 ml) oregano
1/2 tsp (3 ml) tarragon
Directions
Boil water, add couscous and reduce heat.
Simmer for 5 minutes.
Let stand until cool.
Mix couscous with vegetables.
Prepare dressing with oil, lemon juice and the 5 herbs.
Pour over salad and let sit 10 minutes before serving.
