Courgette Boats Recipe

Ingredients
| 6 medium sized zucchini topped and tailed | ||
| Butter | 2 Tablespoon | |
| Onion | 1 Medium, finely chopped | |
| Tomatoes | 2 Large, chopped | |
| 1/2 cup chopped, cooked ham | ||
| White breadcrumbs | 2 Tablespoon | |
| Dried oregano | 1/2 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1 Cut: a thin lengthways slice from each courgette (zucchini). Scoop out a channel 1 cm/'/2Jnch deep. (Keep pulp for a soup recipe.)
2 Place the butter in a jug and microwave on full power for 1 minute.
3 Stir in the onion. Microwave on full power for 1 minute.
4 Mix all the remaining ingredients with the cooked onion.
5 Pile evenly into the courgette (zucchini) shells and top with the 'lids'.
6 Arrange the prepared courgette (zucchini) boats in a shallow round container.
7 Pour 2 tablespoons of water into the base, cover tightly with plastic wrap, and pierce once in the centre.
8 Microwave on full power for 12 1/2 minutes, turning the dish once, half way through cooking, if necessary.
9 Allow to stand, covered, for 5 minutes. Serve with freshly boiled white or brown rice.
