Countryside Potato Salad Recipe
Ingredients
| Garlic | 2 Clove (5gm), smashed | |
| Wine vinegar | 3 Tablespoon | |
| Olive oil | 1/2 Cup (16 tbs) | |
| 3 potatoes, cooked in skins and still hot | ||
| 10 slices mild salami, cut into julienne | ||
| Red onion | 4 Tablespoon, chopped | |
| Green onions | 2 , chopped | |
| Parsley | 1 Tablespoon, chopped | |
| Pimento | 4 Tablespoon, chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place garlic, vinegar and oil in bowl. Season with salt and pepper. Whisk together for 1 minute.
Peel, then slice potatoes thick. Place in mixing bowl.
Add remaining salad ingredients and toss. Pour in vinaigrette and toss again. Season well and marinate 15 minutes before serving.
