Ingredients

3 tablespoons olive oil
1/2 onion medium dice
1-2 cloves garlic small dice
2 medium carrots medium dice
1/2 cup button mushrooms
2 cups fresh snap peas
1 red or green bell pepepr medium dice
2 cups long grain rice
4 cups veg broth
2 cups bread crumbs

How to make Country Style Vegan Burgers

In a large sauce pan on medium heat pour in the oil. Add the onion and garlic and sweat, don't let them brown. After a few minutes of sweating add in the mushrooms, let them cook for about 5 minutes. Once the mushrooms are tender add in the rest of the ingredients, except for the rice and veg broth. Let the rest of the ingredients cook for about 5 minutes, then add in the rice and let cook for 5 minutes without any liquid. Add in the veg broth and bring to a boil. Let cook for an hour. When done cooking take off the burner and pour into a food processor and add half of the bread crumbs. Blend all the ingredients together, but still leaving some chunks to give texture. Take the mixture and place in a cool spot for 30 minutes to let the mixture gain some durability. Once cool enough, form the mixture into chosen size of patty. Use the rest of the bread crumbs and coat both sides of the patty in them. Once finished place the patties back in a cool spot to let them form their shape better. When ready to eat simply heat up a pan with a small amount of oil and cook both sides for 3 to 5 minutes depending on how crispy one would like. Built the burger as you desire. The left over patties can be placed in the fridge or freezer for later use.
