Country Style Bean Soup Recipe

Ingredients
21/2 cups dry lima beans
8 cups water
1 teaspoon salt
1/2 pound bulk pork sausage
2 medium apples, peeled, cored, and cubed (2 cups)
2 stalks celery, chopped (1 cup)
1 large onion, chopped (1 cup)
1 clove garlic, minced
1 28-ounce can tomatoes, cut up
2 tablespoons brown sugar
2 tablespoons prepared mustard
1 teaspoon salt
1/4 teaspoon pepper
Directions
Rinse beans.
In 5-quart Dutch oven or kettle combine beans and water.
Bring to boiling.
Reduce heat; cover and simmer for 2 minutes.
Remove from heat.
Let stand, covered, for 1 hour.
{Or, soak beans in the water overnight in a covered pan.)
Do not drain.
Add 1 teaspoon salt.
Bring to boiling.
Reduce heat; cover and simmer beans for 1 hour.In skillet cook sausage, apples, celery, onion, and garlic till sausage is done; drain off fat.
Add sausage mixture to beans.
Stir in undrained tomatoes, brown sugar, mustard, 1 teaspoon salt, and pepper.
