Country Captain Chicken Recipe
This Country Captain recipe is one of the gems from my family cookbook. Country Captain makes a yummy Side Dish. The Country Captain is made with Chicken which is easy to find at any grocery store. Enjoy this dish with your kin and friends and get back to me with all that they have said.
Ingredients
2 broiler fryers
1/4 cup flour
2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons vegetable oil
1 large onion, chopped
1 large green pepper, halved, seeded, and chopped
1 large clove of garlic, crushed
3 teaspoons curry powder
1 can tomatoes
1/2 cup raisins or currants
Hot cooked rice
Directions
Cut chicken into serving size pieces.
Combine flour with 1 teaspoon of the salt and 1/4 teaspoon of the pepper in a plastic bag.
Shake chicken, a few pieces at a time, in flour mixture to coat; tap off excess.
Brown chicken, part at a time, in oil in a kettle.
Remove chicken; keep warm.
Add onion, green pepper, garlic and curry powder to drippings remaining in kettle; saute until soft.
Add tomatoes (breaking with spoon), raisins and reserved chicken; cover.
Simmer 1 hour, or until chicken is tender.
Arrange chicken on a bed of rice.
Spoon sauce over top.
