Ingredients

 
6 slices bacon
 
1 pkg. (1 1/2 lbs.) frozen potatoes O'Brien
 
1 t salt
 
1/4 t pepper
 
6 eggs
 
1 pkg. (4 oz.) grated sharp Cheddar cheese (optional)

Directions

Cook bacon until crisp; remove from skillet.
Pour off all but 2 T bacon fat.
Add potatoes, season with salt and pepper and cook according to directions on potato package.
Carefully break 6 eggs over potato mixture, cover and cook until egg whites are firm.
Garnish with bacon strips, sprinkle with grated cheese.
Cover and heat a moment longer until cheese just begins to melt.
