Country Soup Recipe

Ingredients
2 tbsp (30 ml) butter
1 celery stalk, diced
1 carrot, pared and diced
1 medium onion, diced
1 garlic clove, smashed and chopped
1/2 tsp (2 ml) chervil
1 bay leaf
1/2 cup (125 ml) yellow split peas
1/2 lb (250 g) flank steak,thinly sliced and seared in oil
5 cups (1.2 L) light beef stock, heated
6 large mushrooms, diced
Salt and pepper
Directions
Place butter, celery, carrot, onion, garlic, seasonings and bay leaf in casserole; cover and microwave 5 minutes.
Mix in peas, meat and beef stock; correct seasoning.
Cover and continue microwaving 40 minutes.
Stir in mushrooms and finish microwaving 3 minutes uncovered.
