Country Soup Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Stalk celery | 1 , diced | |
| 1 carrot, pared and diced | ||
| Onion | 1 Medium, diced | |
| Garlic | 1 Clove (5gm), smashed | |
| Chervil | 1/2 Teaspoon | |
| Bay Leaf | 1 | |
| Yellow peas | 1/2 Cup (16 tbs) | |
| Flank steak | 1/2 Pound, thinly sliced | |
| Beef Stock | 5 Cup (16 tbs), heated | |
| Mushrooms | 6 Large, diced | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place butter, celery, carrot, onion, garlic, seasonings and bay leaf in casserole; cover and microwave 5 minutes.
Mix in peas, meat and beef stock; correct seasoning.
Cover and continue microwaving 40 minutes.
Stir in mushrooms and finish microwaving 3 minutes uncovered.
